A decent grep program will also allow you to search a bunch of files for the text string that you need to find (character name). After a while, I figured out which field was name, age, items, item charges, strength, etc. in the hex editor after the name, reloading the game, and seeing what got modified. When I was a kid (19 years ago, actually), I did this for Might and Magic I & II by finding the character file (can't remember the name), and then, after backing it up, just typing 01 02 03. Once you've done that, you'll have the right file, but there's no easy way to determine what values correlate with which attributes, items, etc. You need to find at least one text string in the files that corresponds to your characters.
